Blackberry Buttercream
This blackberry buttercream is bursting with delicious flavor and is perfect for filling, frosting, and decorating all your favorite treats.
Ingredients
Buttercream Ingredients:
- 1 cup 2 sticks dairy-free unsalted butter, at room temperature
- 3 1/2 cups powdered sugar
- 1 tablespoon pure vanilla extract
- 1/4 cup blackberry purée
For the Blackberry Purée:
- 2 cups fresh blackberries
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons light brown sugar
- 2 tablespoons vegan vanilla protein powder or 1 tablespoon cornstarch
Instructions
Make the Blackberry Purée:
- In a medium saucepan, combine the blackberries, lemon zest, lemon juice, and brown sugar.
- Cook over high heat until the mixture starts to boil. Use a fork to mash the berries as they cook.
- Stir in the protein powder or cornstarch and continue cooking for 10-15 minutes, or until the purée thickens.
- Remove from heat and transfer the purée to an airtight container. Refrigerate until cooled.
Make the Buttercream:
- In a stand mixer fitted with the paddle attachment, cream the butter on medium-high speed until it becomes light and creamy.
- Turn the mixer to low and gradually add the powdered sugar, scraping down the sides of the bowl after each addition.
- Add the vanilla extract and cooled blackberry purée. Mix on low speed for another 1-2 minutes, or until everything is fully incorporated and the buttercream is smooth.
