Biscoff White Chocolate Chip Cookies

  • 1/2 cup melted unsalted butter
  • 1/2 cup softened Biscoff spread
  • 2/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg + 1 yolk
  • 2 teaspoons vanilla extract
  • 1 2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 5 Biscoff cookies (crushed)
  • 3/4 cup white chocolate chips

**Other:**

  • 6 Biscoff cookies (split in half for optional topping)
  1. Preheat your oven to 350°F.
  2. In a small bowl, whisk together all-purpose flour, baking soda, and salt.
  3. In a large bowl, whisk together the melted butter, softened Biscoff spread, brown sugar, white sugar, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients using a rubber spatula until a dough forms.
  5. Mix in the white chocolate chips and crushed Biscoff cookies.
  6. Scoop out large portions of dough onto a parchment-lined baking sheet, ensuring they are spaced apart.
  7. Bake for about 10 minutes.
  8. As soon as they come out of the oven, insert half a Biscoff cookie into the center of each cookie for decoration (optional).
  9. Let them cool on the tray for 10 minutes before transferring to a rack to cool completely. Then, enjoy your delicious cookies!
