Preheat your oven to 350°F.

Combine the wet and dry ingredients using a rubber spatula until a dough forms.
Mix in the white chocolate chips and crushed Biscoff cookies.
Scoop out large portions of dough onto a parchment-lined baking sheet, ensuring they are spaced apart.
Bake for about 10 minutes.
As soon as they come out of the oven, insert half a Biscoff cookie into the center of each cookie for decoration (optional).
Let them cool on the tray for 10 minutes before transferring to a rack to cool completely. Then, enjoy your delicious cookies!
