Your next movie night needs this rich, gooey brownie dish 🤤. It’s fudgy and decadent, loaded with crunchy Biscoff cookies and pockets of melty chocolate 🍫. Serve warm with a scoop of ice cream and a drizzle of Biscoff spread.

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup vegan chocolate protein powder (or substitute with extra cocoa powder)
  • 1 cup light brown sugar
  • 1 teaspoon baking powder
  • 4 tablespoons ground flaxseed
  • 1 cup plant-based milk
  • 1/2 cup vegan butter (melted)
  • 2 tablespoons Biscoff spread (melted)

For topping:

  • Biscoff cookies (chopped)
  • Dark chocolate (chopped)
  1. Preheat your oven to 340°F and grease a cast iron skillet or oven-safe pan.
  2. In a large bowl, whisk together the melted butter, Biscoff spread, and sugar until well combined.
  3. Add the flaxseed and plant-based milk, stirring until smooth.
  4. Mix in the flour, cocoa powder, protein powder, salt, and baking powder, using a spatula or wooden spoon until everything is fully combined. Fold in the chopped chocolate and Biscoff cookies.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Sprinkle a few more chopped cookies and chocolate over the top, pressing them lightly into the batter.
  7. Bake for 30 minutes, or until the edges are set and the center remains gooey.
  8. Remove from the oven and let cool for 5-10 minutes before serving.
