Beef Chorizo and Chicken Pasta

Ingredients
  

**Chicken:**

  • 1 pound of chicken breast
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of coriander
  • 1/2 teaspoon of oregano

**Sauce:**

  • 2 tablespoons of unsalted butter
  • 1 tablespoon of minced garlic
  • 1/4 cup of tomato paste
  • 2 cups of heavy cream
  • 2 tablespoons of cream cheese
  • 1 teaspoon of chili powder
  • 1 teaspoon of dried basil
  • 1/2 cup of freshly grated parmesan cheese add more to taste

**Other:**

  • 16 ounces of rigatoni or penne pasta
  • 12 ounces of beef chorizo
  • 1 to 2 tablespoons of chopped parsley

Instructions
 

**Preparing the Chicken:**

  • In a bowl, mix the chicken with olive oil, salt, paprika, garlic powder, black pepper, cumin, coriander, and oregano for even marination.
  • Heat a skillet over medium-high heat, add oil.
  • Cook the chicken until golden brown on both sides, ensuring it’s cooked through (about 3 minutes per side).
  • Let the chicken cool for 5 to 10 minutes, then chop it into small pieces. Set aside.

**Cooking the Pasta:**

  • Cook the pasta according to the package instructions in salted water.
  • Drain the cooked pasta.

**Preparing the Sauce:**

  • In a saucepan over medium heat, cook the beef chorizo until browned (about 6 to 7 minutes). Transfer to a plate, leaving some oil in the pan.
  • In the same pan, melt the butter and cook garlic and tomato paste for 1 to 2 minutes.
  • Add heavy cream, cream cheese, chili powder, dried basil, parmesan, and cooked chorizo. Whisk and simmer until thickened.
  • Remove from heat, add back the pasta and parsley. Mix well.

Notes

The sauce doesn’t need extra salt because the chorizo and parmesan naturally salt it. Adjust to taste if needed. Enjoy your flavorful pasta!
