If Barbie had her way, she’d lounge outside her dream house, sipping cocktails all day. Lucky her! But what about us? Well, we’re always up for a cocktail or mocktail, whether it’s pink or rainbow-colored—just slide it our way. And we reckon if Barbie had to pick between booze or bubbles, she might go for both, depending on her mood. Imagine a frothy pink, citrusy, fizzy drink that’s perfect for chilling in the backyard with pals or hosting a summer pool bash. It’s kind of like a Pink Lady cocktail but with a tequila kick and a splash of club soda for that bubbly touch.

Pro Tips:

  • No orange-flavored tequila? No problem! You can swap it for any clear flavored liqueur; raspberry would work a treat.
  • Club soda is a bit saltier than seltzer. You can use either in this drink.
  • Want that Barbie-approved sparkle? Sprinkle pink, gold, and white sprinkles or edible glitter around the glass rim. You can grab edible gold glitter online.
  • We fancy using a coupe glass, but a martini or rocks glass will do just fine.

Storage:
This drink is super easy to prep ahead of time. Just hold off adding the egg white until you’re ready to serve.

Ingredients

Scale
  • Pink writing gel and pink (white, and gold sprinkles, for the glass rim)
  • 1 large pasteurized egg white
  • 3 oz. Patron Citrónge orange liqueur
  • 2 oz. grenadine
  • 1 oz. fresh lemon juice
  • Ice
  • 8 oz. club soda or seltzer
  • Edible gold glitter (for garnish (optional))


Instructions

  1. Step 1: Coat a section of coupe glasses with writing gel. Mix pink, white, and gold sprinkles in a dish. Press sprinkles onto the gel to stick.
  2. Step 2: In a cocktail shaker, combine egg white, orange liqueur, grenadine, and lemon juice. Fill the shaker with ice, cover, and shake vigorously until frosty, about 20 seconds.
  3. Step 3: Strain the mix into the prepared glasses. Top it off with seltzer. Sprinkle some glitter on top if you fancy.
