  • 1 ½ cups granulated white sugar
  • 2 eggs
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 1 cup mashed banana
  • ½ cup buttermilk

**For the Cream Cheese Frosting:**

  • 1 cup unsalted butter (softened)
  • 8 oz cream cheese (cold)
  • 3 ½ cups powdered sugar
  • Nilla Wafers for decoration


Instructions

**For the Banana Pastry Cream:**

  1. Heat the milk in a saucepan until steaming, then set aside.
  2. In a separate saucepan, whisk together the egg yolks, sugar, salt, vanilla extract, banana extract, and cornstarch until smooth.
  3. Gradually add the heated milk to the egg mixture while whisking continuously.
  4. Cook the mixture over medium-low heat until thickened, then chill in the fridge until cold.

**For the Banana Cake:**

  1. Preheat the oven to 350 degrees Fahrenheit and prepare your cake pans.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. In a separate bowl, cream together the butter and sugar until fluffy.
  4. Add the eggs, egg yolks, vanilla extract, mashed banana, and buttermilk to the butter mixture and mix until combined.
