Ingredients
Banana Sponge:
- 3 cups self-rising flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¾ cup sugar
- 1 ½ cups dairy-free milk + 1 tsp vinegar
- ⅓ cup dairy-free yogurt
- ¼ cup neutral oil
- 3 ripe bananas mashed
Chocolate Frosting:
- 14 oz dairy-free cream cheese
- ¼ cup vegan chocolate protein powder
- ⅓ cup cocoa powder
- 4 tbsp maple syrup
Instructions
- Preheat your oven to 340°F (170°C).
- Grease and line two round cake pans.
- Mix the milk and vinegar, then set aside to curdle.
- In a large bowl, combine the wet ingredients. Sift in the dry ingredients and mix gently until just combined.
- Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While the cakes are baking, whisk together the frosting ingredients until smooth and creamy.
- Once the cakes have cooled completely, layer them with the chocolate frosting.
