Ingredients

Banana Sponge:

  • 3 cups self-rising flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ cup sugar
  • 1 ½ cups dairy-free milk + 1 tsp vinegar
  • cup dairy-free yogurt
  • ¼ cup neutral oil
  • 3 ripe bananas mashed

Chocolate Frosting:

  • 14 oz dairy-free cream cheese
  • ¼ cup vegan chocolate protein powder
  • cup cocoa powder
  • 4 tbsp maple syrup

Instructions

  • Preheat your oven to 340°F (170°C).
  • Grease and line two round cake pans.
  • Mix the milk and vinegar, then set aside to curdle.
  • In a large bowl, combine the wet ingredients. Sift in the dry ingredients and mix gently until just combined.
  • Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cakes are baking, whisk together the frosting ingredients until smooth and creamy.
  • Once the cakes have cooled completely, layer them with the chocolate frosting.
