Baked Brie Wreath

Ingredients

  • 2 pounds homemade or store-bought pizza dough
  • Neutral oil for greasing
  • 1 8-ounce wheel of brie
  • 1/2 cup 1 stick unsalted butter
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon fresh thyme leaves
  • 1 1/2 teaspoons finely grated lemon zest
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon kosher salt
  • 2 tablespoons honey
  • 1 1/2 teaspoons fresh lemon juice

Instructions

  • Place the pizza dough in a large oiled bowl, cover it with plastic wrap or a kitchen towel, and let it rise at room temperature until it doubles in size, which usually takes 1 to 2 hours.
  • Preheat your oven to 400°F and line a large sheet pan or pizza pan with parchment paper. Put the brie in the center of the pan.
  • Melt the butter in a small pot over medium heat. Pour half of the melted butter into a small bowl and mix in the parsley, rosemary, thyme, lemon zest, red pepper flakes, and salt.
  • Divide the dough into 1-ounce portions. Roll each piece of dough on a dry surface using the weight of your palm until it forms a smooth ball. Arrange the balls in two rings around the brie, with the first ring having about 13 dough balls and the second ring having about 19. Brush the dough with the plain melted butter.
  • Bake the wreath until the dough balls are puffy and golden brown, usually around 30 to 35 minutes. Then, brush them with the herb butter.
  • In a small bowl, combine the honey and lemon juice, and pour the mixture over the brie. Enjoy your delicious creation!
