  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 ripe avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone work great)
  • 4 slices of bread (sourdough, ciabatta, or your favorite variety)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for cooking


Instructions

  1. Cook the Chicken
    • Season the chicken on both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6–7 minutes per side, until fully cooked and no pink remains. Let it rest a few minutes, then slice thinly.
  2. Prep Avocado and Cheese
    • Slice the avocado and set aside your cheese slices.
  3. Prep the Bread
    • Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread.
  4. Assemble the Sandwich
    • On two slices of bread, layer the chicken slices, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo side down.
