- 1 tablespoon olive oil
- 1 ripe avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone work great)
- 4 slices of bread (sourdough, ciabatta, or your favorite variety)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for cooking
Instructions
- Cook the Chicken
- Season the chicken on both sides with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6–7 minutes per side, until fully cooked and no pink remains. Let it rest a few minutes, then slice thinly.
- Prep Avocado and Cheese
- Slice the avocado and set aside your cheese slices.
- Prep the Bread
- Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread.
- Assemble the Sandwich
- On two slices of bread, layer the chicken slices, avocado, cheese, red onion, and tomato. Top with the remaining bread slices, mayo side down.
- Grill the Sandwich
- Heat a skillet or grill pan over medium heat and add a small amount of butter or olive oil. Place the sandwiches in the pan and cook 3–4 minutes per side, pressing lightly with a spatula, until the bread is golden and the cheese has melted.
