Asian Cucumber Salad

  • 2 medium American cucumbers thinly sliced
  • 1 green onion chopped
  • 1/4 cup seasoned rice wine vinegar
  • 2 teaspoons toasted sesame oil
  • Salt to your liking
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons fresh mint chopped
  • 1 clove garlic grated
  • 1/4 teaspoon fresh ginger freshly grated
  • 1 tablespoon black sesame seeds
  • Crushed red pepper flakes to your taste


  • Toss the sliced cucumbers and green onions into a large bowl.
  • Pour in the rice wine vinegar, sesame oil, and salt to your liking. Give it a good stir.
  • Add the cilantro, basil, mint, garlic, ginger, and black sesame seeds. Toss it all together.
  • Sprinkle in crushed red pepper flakes according to your taste. Mix it up.
  • Ready to enjoy! Serve it immediately.
  • For later, store it in an airtight container in the fridge – it stays fresh for up to 5 days.
