Apple Pie Bread Pudding

Ingredients

**For the Bread Pudding:**

  • 1 package of King’s Hawaiian Sweet Rolls let them go a bit stale
  • 2/3 to 3/4 cup of half and half
  • 2 tablespoons of melted unsalted butter
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1/3 cup of granulated sugar
  • a pinch of salt

**For the Apple Pie Filling:**

  • 2 large Granny Smith apples peeled and cubed
  • 3 tablespoons of unsalted butter
  • 1/3 cup of light brown sugar
  • 1 1/4 teaspoon of cinnamon
  • a pinch of salt
  • 1 teaspoon of vanilla extract
  • 1/2 tablespoon of lemon juice
  • 2 teaspoons of cornstarch
  • 1 tablespoon of water

Instructions

**Making the Apple Pie Filling:**

  • Heat a pan over medium heat and add the butter, apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice.
  • Let it simmer for 6 to 8 minutes until the apples are soft.
  • Mix the cornstarch and water in a small bowl to make a slurry. Add it to the pan to thicken the filling. Then, transfer it to a bowl.

**Assembling and Baking the Bread Pudding:**

  • Preheat the oven to 350°F.
  • In a measuring glass or bowl, mix the half and half, melted butter, egg, vanilla extract, sugar, and salt until smooth.
  • Tear the sweet rolls into smaller pieces and place them in a large mixing bowl.
  • Pour the milk mixture over the rolls and gently toss to combine.
  • In two individual skillets, layer the soaked bread, apple pie filling, and another layer of soaked bread.
  • Bake for 15 to 20 minutes until golden brown and set in the center.
  • Serve warm with vanilla ice cream if desired!
