Apple Pie Bread Pudding

Ingredients
**For the Bread Pudding:**
- 1 package of King’s Hawaiian Sweet Rolls let them go a bit stale
- 2/3 to 3/4 cup of half and half
- 2 tablespoons of melted unsalted butter
- 1 large egg
- 1 teaspoon of vanilla extract
- 1/3 cup of granulated sugar
- a pinch of salt
**For the Apple Pie Filling:**
- 2 large Granny Smith apples peeled and cubed
- 3 tablespoons of unsalted butter
- 1/3 cup of light brown sugar
- 1 1/4 teaspoon of cinnamon
- a pinch of salt
- 1 teaspoon of vanilla extract
- 1/2 tablespoon of lemon juice
- 2 teaspoons of cornstarch
- 1 tablespoon of water
Instructions
**Making the Apple Pie Filling:**
- Heat a pan over medium heat and add the butter, apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice.
- Let it simmer for 6 to 8 minutes until the apples are soft.
- Mix the cornstarch and water in a small bowl to make a slurry. Add it to the pan to thicken the filling. Then, transfer it to a bowl.
**Assembling and Baking the Bread Pudding:**
- Preheat the oven to 350°F.
- In a measuring glass or bowl, mix the half and half, melted butter, egg, vanilla extract, sugar, and salt until smooth.
- Tear the sweet rolls into smaller pieces and place them in a large mixing bowl.
- Pour the milk mixture over the rolls and gently toss to combine.
- In two individual skillets, layer the soaked bread, apple pie filling, and another layer of soaked bread.
- Bake for 15 to 20 minutes until golden brown and set in the center.
- Serve warm with vanilla ice cream if desired!
