A single-serving apple cake made in the microwave — all the cozy fall flavor in one quick mug. Soft, tender, and perfect when you want a warm dessert for one.

- 1 cup diced apple (about 1 small–medium apple)
- 2 tbsp unsalted butter, softened to room temperature
- 2 tbsp milk (any kind)
- 1/4 cup (4 tbsp) all-purpose flour
- 2 tbsp granulated sugar (adjust to taste)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- a small pinch (about 1/8 tsp) salt
Instructions
- Prep the apple: Peel, core and cut the apple into small 1/4-inch cubes until you have about 1 cup. Put the pieces into a microwave-safe mug (a larger mug makes mixing easier).
- Soften the fruit: Microwave the apple cubes on high for about 2 minutes so they soften and concentrate their flavor. This step helps prevent a soggy cake.
- Melt the butter: Take the mug out, add the softened butter and stir until it melts into the warm apple. Then stir in the milk so the mixture cools slightly and blends evenly.
- Add dry ingredients: Sprinkle in the flour, sugar, baking powder, and salt. Add the vanilla. Stir everything until the batter is smooth and there are no lumps.
- Microwave to finish: Cook the mug cake in the microwave — about 1 minute 50 seconds if your mug is wide, or about 2 minutes if the mug is taller. Start checking at the shorter time; microwaves vary.
- Rest briefly: Leave the cake inside the closed microwave for another 10–20 seconds before opening; this helps the center finish without collapsing.
- Serve warm: Top with a scoop of ice cream, a pat of butter, or a dusting of cinnamon. Eat straight from the mug.
Notes
- Best apples: Honeycrisp, Fuji, Gala, or Golden Delicious work great — pick a firm, sweet variety.
- Sugar adjustment: If your apple is very sweet, you can cut the sugar back. Two tablespoons is a good starting point.
- Mug choice: A wide, shallow mug makes for more even cooking and easier stirring; a medium mug works too.
- Texture: Microwave cakes are best right away — they can dry out a little as they cool. Reheat for a few seconds if needed.
- Butter temp: Using room-temperature butter speeds melting and helps keep the batter from cooling too much when mixed with the warm apples.
