Ingredients
  

DOUGH

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon cinnamon
  • 1/4 cup vegan sugar see notes
  • 1/2 teaspoon salt
  • 1/4 cup vegan butter
  • 3/4 cup almond milk

APPLE FILLING

  • 2 tablespoons coconut oil or more vegan butter
  • 2 large honey crisp apples peeled and diced (about 3 cups)
  • 1/2 tablespoon cinnamon
  • 2 tablespoons vegan sugar

CREAM CHEESE FROSTING

  • 4 ounces vegan cream cheese
  • 1/4 cup vegan powdered sugar
  • 1-2 tablespoons almond milk or more for desired consistency

Instructions
 

  • Begin by combining flour, baking powder, vegan sugar, salt, and cinnamon in a large bowl. Whisk until well blended.
  • In a small saucepan on the stovetop, gently heat vegan butter and almond milk until just combined, being careful not to overheat. Once melted and blended, add to the flour mixture and stir with a rubber spatula until dough forms.
  • Flour a clean surface, knead the dough for a few minutes until well incorporated, then shape it into a large ball and return it to the mixing bowl. Cover with a damp towel and let it rise for 15 minutes.
  • Preheat the oven to 350°F and grease a baking dish with non-stick spray or vegan butter.
  • Peel and slice the honey crisp apples into bite-sized pieces. In a large skillet, heat coconut oil and add the apples. Sprinkle with cinnamon and vegan sugar, then simmer for 5-7 minutes, stirring occasionally. Remove from heat and set aside.
  • Roll out the dough on a floured surface into a rectangle (about 13×9 inches and 1/3 inch thick).
  • Spread the apple mixture evenly over the dough. Starting at one end, tightly roll the dough into a log with the crease side facing down.
  • Using a knife or floss, cut the rolled dough into individual cinnamon rolls (about 2-2.5 inches wide) and place them in the greased baking dish. Let them rise for another 5 minutes.
  • Bake in the preheated oven for 25 minutes. Remove and allow to cool slightly.
  • While baking, prepare the frosting by mixing vegan cream cheese, powdered sugar, and almond milk until smooth. Drizzle over the warm cinnamon rolls and enjoy!
  • Store leftover apple cinnamon rolls in an airtight container in the fridge for up to 4-5 days. Reheat in the microwave or air fryer before serving.
