Air Fryer Shrimp

Ingredients

  • 1 lb. raw large shrimp (deveined with tails on)
  • 2 teaspoons kosher salt (divided)
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • 1 tablespoon fresh lemon juice
  • ¾ cup panko crumbs
  • ½ cup shredded parmesan cheese or pecorino romano
  • 2 large eggs


Instructions

  1. Rinse the shrimp under cold water and pat dry. Place them in a bowl. Add 1 teaspoon kosher salt, pepper, paprika, and lemon juice to the shrimp, tossing until they’re coated. Set aside for 15 minutes.
  2. While the shrimp marinate, combine panko crumbs, cheese, and 1 teaspoon of salt in a bowl. Crack the eggs into a separate bowl and whisk.
  3. After 15 minutes, preheat the air fryer to 400ºF.
  4. Dredge a shrimp through the egg wash, allowing excess to drip off. Then, coat the shrimp evenly with the panko mixture. Repeat the process for a second coating. Place the breaded shrimp on a plate.
  5. Drizzle olive oil in the bottom of the air fryer and add the shrimp without crowding them.
  6. Air fry the shrimp for 2 minutes, flip, and fry for another 2 minutes until golden brown and cooked.
  7. Serve the shrimp with a squeeze of fresh lemon, marinara sauce, or atop a salad.

Notes

  • We recommend using large shrimp for this recipe, but you can use medium or jumbo shrimp with adjustments.
  • Breading the shrimp takes time, so be patient and enjoy the process!
  • If preferred, you can use breadcrumbs instead of panko crumbs.
