Air Fryer Jalapeño Chicken Meatballs

Ingredients

  • 1 1/2 pounds of chicken breasts
  • 2 jalapeños (seeds removed)
  • 1/3 cup of parsley
  • 1/2 red onion (sliced)
  • 1 teaspoon of salt
  • Optional: 1/4 teaspoon of black pepper
  • 1/3 cup of shredded Cheddar cheese
  • 1 large egg
  • 2 cloves of garlic


Instructions

  1. Preheat your air fryer to 380°F and give the basket a quick spray with oil.
  2. Chop the chicken breasts into small pieces and toss them into the food processor.
  3. Add jalapeños, parsley, red onion, salt, pepper, Cheddar cheese, egg, and garlic to the processor.
  4. Pulse until everything is nicely mixed.
  5. Use an ice cream scoop to shape the mixture into balls.
  6. Place the meatballs in the air fryer basket with a little space in between. You might need to work in batches.
  7. Air fry the meatballs for 12-14 minutes until they’re cooked through and golden brown.
  8. Store them in an airtight container in the fridge for up to 4 days.

Notes

To freeze, let the meatballs cool, then arrange them on a baking sheet and freeze for 30 minutes. Transfer them to a freezer-safe container or bag and freeze for up to 3 months. Enjoy these tasty treats anytime!
