Ingredients
For the Crust:
- 10.5 oz about 2 cups biscuits, crushed
- 6 tbsp dairy-free butter or margarine melted
For the Filling:
- 14 oz dairy-free cream cheese
- ⅓ cup powdered sugar
- ⅓ cup vegan vanilla protein powder
- Zest and juice of one lemon
- 2 tbsp cornstarch
- 6 oz dairy-free white chocolate
Instructions
- Prepare the Crust:
- Crush the biscuits into fine crumbs and place them in a large bowl.
- Add the melted butter and mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Chill in the fridge while you prepare the filling.
- Make the Filling:
- Melt the white chocolate and allow it to cool slightly.
- In a separate bowl, combine the cream cheese, powdered sugar, protein powder, lemon zest, lemon juice, and cornstarch.
- Gently fold in the melted white chocolate until everything is well mixed.
- Assemble the Cheesecake:
- Pour the filling over the chilled crust and spread it evenly.
- Refrigerate overnight to set.
- Decorate:
- Once set, remove the cheesecake from the pan.
