For the Crust:

  • 10.5 oz about 2 cups biscuits, crushed
  • 6 tbsp dairy-free butter or margarine (melted)

For the Filling:

  • 14 oz dairy-free cream cheese
  • ⅓ cup powdered sugar
  • ⅓ cup vegan vanilla protein powder
  • Zest and juice of one lemon
  • 2 tbsp cornstarch
  • 6 oz dairy-free white chocolate


Instructions

  1. Prepare the Crust:
  2. Crush the biscuits into fine crumbs and place them in a large bowl.
  3. Add the melted butter and mix until well combined.
  4. Press the mixture firmly into the bottom of a 9-inch springform pan.
  5. Chill in the fridge while you prepare the filling.
  6. Make the Filling:
  7. Melt the white chocolate and allow it to cool slightly.
  8. In a separate bowl, combine the cream cheese, powdered sugar, protein powder, lemon zest, lemon juice, and cornstarch.
  9. Gently fold in the melted white chocolate until everything is well mixed.
  10. Assemble the Cheesecake:
  11. Pour the filling over the chilled crust and spread it evenly.
  12. Refrigerate overnight to set.
  13. Decorate:
  14. Once set, remove the cheesecake from the pan.
  15. Garnish with extra lemon zest and white chocolate curls for a beautiful finish.
