Moist chocolate cake layered over juicy Black Forest berries with a rich fudge sauce that forms while baking and soaks through for the gooiest pudding. This dessert is dairy-free, egg-free, and super easy to make! Serve with ice cream for the ultimate winter comfort dessert to share!

Black Forest Self Saucing Pudding

Ingredients

Sponge:

  • 2 cups self-raising flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 3/4 cup sugar
  • 1 1/4 cups dairy-free milk + 1 tsp vinegar
  • 1/2 cup dairy-free yogurt
  • 1/2 cup neutral oil
  • 1 cup frozen Black Forest fruits

Topping:

  • 1/2 cup light brown sugar
  • 3/4 cup boiling water
  • 6 tbsp cocoa powder

Instructions

  • Preheat the oven to 340°F (170°C).
  • Lightly grease a square baking pan (about 9 inches).
  • Mix together milk and vinegar, then set aside to thicken.
  • Mix in the remaining wet ingredients.
  • Sift in the dry ingredients.
  • Gently mix until just combined.
  • Pour the forest fruits into the bottom of the pan.
  • Pour the cake mixture on top.
  • Sprinkle the sugar and cocoa powder over the cake batter.
  • Pour over the boiling water.
  • Bake for 30-35 minutes, or until the center is almost set.
  • Leave to cool slightly before serving!
