These Pumpkin Brigadeiros are a breeze to make and incredibly tasty. With just a few ingredients, you can whip up this fun treat in no time. Perfect for Halloween parties or Thanksgiving, they’re the best and easiest seasonal delight! Serve these Pumpkin Brigadeiros at any fall celebration or Halloween bash for a hit.

Brigadeiros are a beloved Brazilian sweet, a must-have at our parties and gatherings—basically a national treasure!

Why We Love Brigadeiros

  • Simplicity: They’re super easy to make! You just need sweetened condensed milk, butter, and your favorite flavoring. While chocolate is the classic choice, we love experimenting with different flavors.

Tips for Making Pumpkin Brigadeiros

  • Cooking: Don’t undercook or overcook the brigadeiro. If undercooked, they won’t hold their shape; if overcooked, they’ll be too hard to roll.
  • Pumpkin Spice: Feel free to add pumpkin spice. Try ¼ teaspoon in the brigadeiro dough and ½ teaspoon in the rolling sugar.
  • Make Ahead: The dough can be frozen for up to 2 months if well-packaged. Avoid freezing assembled brigadeiros, as the sugar coating can melt and become sticky.
  • Sugar Choice: Use raw sugar for rolling—it’s coarser and gives the brigadeiros a prettier look.
  • Storage: Keep brigadeiros covered in the fridge. They’ll last a long time if stored well.

Cook Time 15 minutes
Resting Time 1 hour
Servings 20 brigadeiros

Ingredients

  • 1 can 14 oz sweetened condensed milk
  • ¼ cup pumpkin puree
  • 1 tablespoon unsalted butter plus more for rolling

For Rolling:

  • ½ cup granulated sugar
  • 20 mini chocolate chips

Instructions

  • Combine the sweetened condensed milk, pumpkin puree, and butter in a small saucepan. Cook over medium heat, stirring constantly until it starts to boil.
  • Continue cooking for about 15 minutes until the mixture is very thick. If you scrape the bottom of the pan with a spatula, the brigadeiro should take about 5 seconds to come back together.
  • Pour the mixture onto a plate and let it cool. Chill it in the fridge for at least 1 hour until completely cold.
  • Butter your hands, scoop a small amount of the mixture, and roll it into a ball. Use a toothpick to make dents to form a pumpkin shape. Place a mini chocolate chip on top as the pumpkin stem.

Notes

Storage

  • Store the brigadeiros in the fridge in a covered container for up to 15 days.

Notes

  • Sugar: Raw sugar makes the brigadeiros look cuter compared to regular granulated sugar.
  • Pumpkin Spice: Add ¼ teaspoon of pumpkin spice to the mixture or mix some with the sugar for rolling. Try both ways to see which you prefer!
