Let’s whip up some Starbucks-inspired oatmeal fudge bars, but with a healthy twist—they’re vegan and gluten-free!
These bars are a breeze to make and feature a delicious oatmeal crust and topping, with a simple, three-ingredient fudgy center. And the best part? They’re completely free of refined sugar, but you’d never even know it!
Starbucks Oatmeal Fudge Bars
Ingredients
For the base and crumb topping, you’ll need:
- 2 cups almond flour
- 1 cup old-fashioned rolled oats
- 1/2 cup coconut sugar
- 1/4 tsp salt
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 cup vegan cold butter cut into cubes
- 2 flax eggs 3 Tbsp ground flax mixed with 4 Tbsp water
For the fudge center, gather:
- 1.5 cups chocolate chips I used @hukitchen
- 1/2 cup nut or seed butter I used @oathaus
- 1 can of coconut cream solid part only
Instructions
- Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper and nonstick spray.
- Mix together the ingredients for the base and topping. Once you’ve added the cold butter, use your hands to combine everything thoroughly.
- Split the mixture into 3/4 and press the majority into the base of the prepared pan.
- In a saucepan over low heat, combine the ingredients for the fudge center, stirring constantly until smooth. Pour this mixture evenly over the base.
- Crumble the remaining oat mixture on top.
- Bake for 30 minutes or until the topping is golden brown.
- Let the bars cool for 30 minutes, then refrigerate for at least 2 hours before cutting into squares.
