Ingredients

  • 1.5 cups mashed overripe banana (approximately 3 large bananas)
  • 1/2 cup almond butter
  • 1/4 cup ground flax
  • 1.5 cups oats
  • 3/4 cup oat flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 cup chocolate chips


Instructions

  1. Preheat your oven to 350°F and line an 8×8 pan with parchment paper. Here’s a pro tip: lightly spray the pan with non-stick spray before laying down the parchment paper to keep it from sliding around.
  2. In a large bowl, thoroughly mash the bananas using a fork or potato masher until smooth.
  3. Add in the almond butter, ground flax, and cinnamon, and mix well.
  4. Next, fold in the oats, oat flour, and baking powder until everything is nicely combined. Lastly, gently stir in the chocolate chips.
  5. Pour the mixture into the prepared 8×8 dish and spread it out evenly. Bake in the preheated oven for about 18 minutes.
  6. Once baked, allow the bars to cool completely before cutting into them.
  7. Store your oat bars in an airtight container in the fridge for up to 4-5 days.
