Ingredients

  • 4 ripe bananas mashed
  • 3/4 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 2 eggs or flax eggs or 1/3 cup applesauce
  • 1 cup gluten-free flour
  • 3/4 cup Kodiak Cakes protein oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 3/4 cup chocolate chips

Instructions

  • Start by preheating your oven to 350°F and spraying an 11×7 sheet pan (or 1/4 sheet pan) with oil spray.
  • In a large bowl, mash the bananas until smooth. Add in the coconut sugar, melted coconut oil, eggs or substitutes, and mix until well combined.
  • Next, add the flour, oats, baking soda, salt, and cinnamon to the bowl. Mix everything together, then gently fold in the chocolate chips.
  • Transfer the batter to the prepared baking pan and use a spatula to spread it out evenly.
  • Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown.
  • Once done, remove from the oven and allow to cool completely before slicing into 12 squares.
