Ingredients

  • 4 ripe bananas (mashed)
  • 3/4 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 2 eggs (or flax eggs or 1/3 cup applesauce)
  • 1 cup gluten-free flour
  • 3/4 cup Kodiak Cakes protein oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 3/4 cup chocolate chips


Instructions

  1. Start by preheating your oven to 350°F and spraying an 11×7 sheet pan (or 1/4 sheet pan) with oil spray.
  2. In a large bowl, mash the bananas until smooth. Add in the coconut sugar, melted coconut oil, eggs or substitutes, and mix until well combined.
  3. Next, add the flour, oats, baking soda, salt, and cinnamon to the bowl. Mix everything together, then gently fold in the chocolate chips.
  4. Transfer the batter to the prepared baking pan and use a spatula to spread it out evenly.
  5. Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown.
  6. Once done, remove from the oven and allow to cool completely before slicing into 12 squares.
