Piña Colada Popcorn Yogurt Bark
Ingredients
- 2 cups Greek yogurt
- 1 cup fresh pineapple
- 1 teaspoon vanilla extract
- 1/4 cup maple syrup
- 1/4 teaspoon turmeric optional, for color
For the toppings:
- 1/3 cup unsweetened shredded coconut

Instructions
- Here’s how to whip it up: In a food processor, blend together the yogurt, pineapple, vanilla, and maple syrup until smooth.
- Pour the mixture onto a lined baking sheet (I used a 1/4 sheet pan), then sprinkle on the popcorn and coconut.
- Pop it in the freezer for at least 3 hours until it’s solid.
- Once it’s frozen, break it into pieces and enjoy! Keep any leftovers stored in the freezer, and grab a piece whenever you need a refreshing snack!
