Lemon Parmesan Smashed Broccoli

- 1 large crown of broccoli washed
- 1/3 cup freshly grated Parmesan
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Instructions
- Start by boiling a large pot of water on the stove. Add the broccoli and let it boil for about 4-5 minutes. Be careful not to overcook it, or it’ll become mushy.
- Once cooked, rinse the broccoli under cold water to stop the cooking process and set it aside.
- Preheat your oven to 400°F.
- While the oven heats up, whisk together olive oil, lemon juice, garlic powder, salt, and pepper to make the dressing.
- Line a baking sheet with parchment paper and place the broccoli on top. Break the broccoli into florets and spread them out evenly.
- Use the bottom of a glass to gently smash the broccoli until it’s flat.
