Easy Roasted Tomato Pasta

Summer tomatoes are bursting with sweetness, making them perfect for this simple pasta dish I whipped up for dinner last night. It’s a breeze to prepare! Just serve it with a side salad and/or protein, and dinner is served!

Ingredients

  • 2 cups cherry tomatoes
  • 1 onion roughly chopped
  • 3 cloves garlic
  • 1 tablespoon oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 3/4 to 1 cup freshly grated parmesan cheese divided

Instructions

  • To start, preheat your oven to 400°F. In a baking dish, toss together the cherry tomatoes, onion, garlic, oregano, salt, and pepper. Drizzle olive oil over the top and mix well to coat everything. Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until everything is tender.
  • Once slightly cooled, transfer the mixture to a blender along with 1/2 cup of parmesan cheese. Blend until smooth and creamy.
  • While the sauce is cooking, prepare your pasta according to the package instructions. Remember to reserve about 1/2 cup of pasta water before draining.
  • After draining the pasta, pour the tomato sauce over the top, along with the remaining parmesan cheese and pasta water. Toss everything together until the pasta is well coated.
  • Serve it up on plates and dig in! Enjoy the deliciousness of summer tomatoes in every bite.
