
Here’s a fun twist on the viral date bark that’s not only incredibly delicious but also much easier to whip up than stuffing dates individually. It’s a perfect treat for summer, especially if you’re a fan of ice cream!
Pro Tip: Keep this delightful dessert covered in the freezer as a whole, and whenever you’re craving something sweet, simply cut off a piece to enjoy! (I’ve sliced it open here just for the video!)

			- 12 large medjool dates (pitted (Make sure they’re nice and soft!))
 - 1/2 cup peanut butter
 - 3/4 cup vanilla ice cream (softened)
 - 1/2 cup salted peanuts
 - 1 1/2 cups chocolate chips
 - 1 teaspoon coconut oil
 - Flaky salt
 
Instructions
- Open up the dates, remove the pits, and line them up close together on a baking sheet lined with parchment paper. Use the bottom of a cup sprayed with oil or cooking spray to gently press the dates down and flatten them.
 - Now, let’s get that chocolate melted! Put the chocolate chips and coconut oil in a bowl, then microwave them in 2-3 30-second bursts until they’re completely melted and smooth. Set it aside for now.
 - Spread a layer of peanut butter on top of the flattened dates.
 - Next, add spoonfuls of softened vanilla ice cream and sprinkle the salted peanuts over the top.
 - Finally, pour the melted chocolate over everything and sprinkle some flaky salt on top.
 - Pop it in the freezer for at least 1 hour until the chocolate sets and the ice cream hardens again.
 - Once it’s all set, cut it into pieces and indulge in this delightful treat!
