It’s a fantastic dish you can enjoy all week long, and guess what? It only takes 5 minutes to prep! When you’re ready to dig in, just warm it up—it’s that simple! Personally, I love topping it with vanilla Greek yogurt for an extra protein punch, but maple syrup works great too!

One Pan Mixed Berry Protein Baked Oatmeal

Ingredients

  • 3 ripe bananas
  • 2 cups of rolled oats
  • 1/4 cup of chia seeds
  • 1 teaspoon of cinnamon
  • 1 cup of milk of your choice I prefer almond milk
  • 1 cup of egg whites *if you’re vegan, skip the egg whites and use 2 cups of milk instead!
  • 1/2 teaspoon of almond extract optional, but highly recommended
  • 2 to 2 1/2 cups of mixed frozen berries

Instructions

  • Preheat your oven to 350 degrees F and generously spray a 9×13 baking dish with cooking spray.
  • Start by mashing the bananas well, then add in the oats, chia seeds, cinnamon, milk, egg whites, and almond extract.
  • Give it a good stir, then sprinkle the frozen berries on top. Pop it in the oven and bake for 30-35 minutes, or until the liquid is absorbed.
  • Once it’s done, take it out, serve with yogurt, and dig in! Enjoy every spoonful of this delightful dish!
