Ingredients

For the Homemade Ranch:

  • 1/2 cup plain Greek yogurt
  • ½ cup buttermilk
  • 1 tablespoon mayonnaise
  • 1 teaspoon dried parsley
  • 1 teaspoon dried chives
  • 1 teaspoon dried dill
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon granulated sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • ½ tablespoon lemon zest
  • 1 teaspoon white wine vinegar

For the Buffalo Sauce:

  • ¼ cup melted salted butter
  • ½ cup Frank’s hot sauce
  • 2 tablespoons honey

For the Meatballs:

  • 1 lb. ground chicken
  • 4 tablespoons cold salted butter grated
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 tablespoon dried chives
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons olive oil

Instructions

  • Prepare the ranch dressing by whisking together all the ranch ingredients in a bowl. Refrigerate until ready to serve.
  • Make the buffalo sauce by melting butter in a saucepan over medium heat. Whisk in hot sauce and honey until smooth. Set aside.
  • Mix all meatball ingredients in a large bowl. Shape mixture into balls.
  • Brown meatballs in olive oil in a skillet.
  • Once cooked, return meatballs to skillet and coat with buffalo sauce. Simmer until heated through.
  • Serve meatballs with homemade ranch.
