Crispy Air Fryer Brussel Sprout Salad
Ingredients
- ½ red onion minced
- 2 tablespoons white wine vinegar or rice vinegar
- ¾ teaspoon sea salt divided
- 2 lbs. Brussels sprouts sliced lengthwise and chopped, keeping the stump intact
- 2 tablespoons avocado oil
- ½ cup slivered almonds
- 1.5 tablespoons maple syrup
- 1 teaspoon poppy seeds
- ¼ teaspoon flaky sea salt
- ⅓ cup golden raisins
- ¼ cup freshly grated parmesan cheese
Maple Dijon Dressing:
- 1.5 tablespoons maple syrup
- 1 tablespoon white wine vinegar
- 1 tablespoon mayo
- 1 tablespoon stone ground mustard
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat the air fryer to 400ºF and coat the basket with 1 teaspoon of avocado oil.
- Mix the red onion with vinegar and ¼ teaspoon of salt in a bowl. Set aside.
- Toss Brussels sprouts with 2 tablespoons of avocado oil and ½ teaspoon of salt. Air fry until crispy.
- Air fry almonds with maple syrup, poppy seeds, and flaky sea salt until golden.
- Combine Brussels sprouts, raisins, onions (plus vinegar), and almonds in a bowl.
- Shake all dressing ingredients in a mason jar until combined. Pour over the salad and toss.
