Raspberry Tiramisu

Posted on

We adore the classic tiramisu, but when raspberries join the mix, it takes dessert to a whole new level. The blend of sweet-tart raspberries and raspberry jam pairs flawlessly with creamy mascarpone, coffee, and chocolate, creating a fruity twist on the sophisticated Italian treat that’s perfect for summer (and all year round!).

To enhance the bright flavors, we’ve opted for a splash of orange liqueur (like Cointreau or Grand Marnier) instead of the usual rum. Since ladyfingers soak up the coffee mixture quickly, take your time as you dip them.

While this recipe shines during raspberry season, it’s also versatile for any time of year. Feel free to swap in your favorite fruits and jams. Cranberry sauce could be delightful in the fall, or orange marmalade would add zest in the winter—let your creativity flow!

Now, let’s gather our ingredients and whip up this delightful dessert:

Total Time 4 hours 30 minutes

Ingredients

For the filling:

  • 3 cups heavy cream
  • 3/4 cup powdered sugar
  • 2 teaspoons pure vanilla extract
  • 12 ounces mascarpone cheese

For assembling:

  • 3 cups strongly brewed coffee
  • 1/4 cup Grand Marnier
  • 36 ladyfingers
  • 1/2 cup raspberry jam
  • 12 ounces fresh raspberries
  • Chocolate shavings for garnish

Instructions

  • Step 1: In a large bowl, use a hand mixer to beat the heavy cream, powdered sugar, and vanilla until they form medium peaks.
  • Step 2: In another bowl, combine the mascarpone with about 1/4 cup of the whipped cream. Stir until mixed, then gently fold in the rest of the whipped cream.
  • Step 3: In a large glass measuring cup, mix the coffee and Grand Marnier.
  • Step 4: Spread a thin layer of whipped cream at the bottom of a large trifle dish. Dip each ladyfinger quickly into the coffee mixture, then arrange them in the dish to cover the bottom. Spread about a third of the whipped cream over the ladyfingers evenly. Add half of the raspberry jam gently over the whipped cream, followed by a circle of raspberries. Repeat with another layer of ladyfingers, whipped cream, jam, and raspberries. Finish with a final layer of ladyfingers and whipped cream.
  • Step 5: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
  • Step 6: Before serving, sprinkle chocolate shavings on top.
