#### For the cookies:

  • 1 ¼ cups melted salted butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 eggs (at room temperature)
  • 3 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup M&Ms
  • ¾ cup milk chocolate chips

#### For assembly:

  • ½ gallon vanilla ice cream
  • 1 cup mini M&Ms
  • 1 cup mini chocolate chips


Instructions

#### For the cookies:

  1. In a stand mixer, combine melted butter, brown sugar, granulated sugar, and vanilla. Mix on low until combined.
  2. Add eggs one at a time, followed by the dry ingredients, while the mixer is on low.
  3. Use a rubber spatula to fold in M&Ms and chocolate chips. Cover the bowl with clear wrap and chill in the refrigerator for 30 minutes.
  4. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  5. After chilling, use a large cookie scoop (about 2 1/2-3 tablespoons of dough per cookie) and place onto the cookie pan, spacing about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are just set.
  7. As soon as the cookies come out, use a round cookie cutter or glass to gently reshape them into a circular shape.
  8. Let cool for 4 minutes on the baking sheet before transferring to a cooling rack. Place cookies in the freezer for 15 minutes to chill.

#### For assembly:

  1. Place a chilled cookie upside down and scoop vanilla ice cream on top. Gently spread to the edges and place another cookie on top.
  2. Avoid pressing too hard to prevent cracking, but ensure the sandwich is compact.
  3. Roll the sides into mini chocolate chips, M&Ms, or sprinkles.
  4. Wrap tightly with plastic wrap and place in the freezer. Repeat until all cookie sandwiches are made.
