Almond Energy Bars

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1/2 cup raw almonds (unsalted)
  • 2 tablespoons honey
  • 1/2 cup creamy almond butter
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/4 cup M&Ms
  • 1 tablespoon chia seeds (optional)


Instructions

  1. Turn oats and almonds into a flour-like consistency using a food processor.
  2. Add all other ingredients, excluding M&Ms and chocolate chips; pulse until well-combined.
  3. Gently mix in M&Ms and chocolate chips.
  4. Press the mixture into an 8×8 baking pan. Note: you can also roll them into balls for energy bites!
  5. Place in the fridge or freezer until set, then slice into bars.

Notes

For an extra boost, consider adding chia seeds and flax seeds!
