Air Fryer Jalapeño Chicken Meatballs

Ingredients
- 1 1/2 pounds of chicken breasts
- 2 jalapeños seeds removed
- 1/3 cup of parsley
- 1/2 red onion sliced
- 1 teaspoon of salt
- Optional: 1/4 teaspoon of black pepper
- 1/3 cup of shredded Cheddar cheese
- 1 large egg
- 2 cloves of garlic
Instructions
- Preheat your air fryer to 380°F and give the basket a quick spray with oil.
- Chop the chicken breasts into small pieces and toss them into the food processor.
- Add jalapeños, parsley, red onion, salt, pepper, Cheddar cheese, egg, and garlic to the processor.
- Pulse until everything is nicely mixed.
- Use an ice cream scoop to shape the mixture into balls.
- Place the meatballs in the air fryer basket with a little space in between. You might need to work in batches.
- Air fry the meatballs for 12-14 minutes until they’re cooked through and golden brown.
- Store them in an airtight container in the fridge for up to 4 days.
Notes
To freeze, let the meatballs cool, then arrange them on a baking sheet and freeze for 30 minutes. Transfer them to a freezer-safe container or bag and freeze for up to 3 months. Enjoy these tasty treats anytime!
