Air Fryer Jalapeño Chicken Meatballs

Delicious chicken meatballs are a breeze to make! Just toss boneless, skinless chicken breasts, jalapeños, parsley, red onion, salt, pepper, Cheddar cheese, egg, and garlic into a food processor. Give it a whirl until everything is mixed up nicely. Scoop out equal-sized balls and pop them into the air fryer, leaving a bit of space between each. In about 12-14 minutes, you’ll have perfectly cooked and golden-brown meatballs that are great for snacking, appetizers, or even a main course.

Air Fryer Jalapeño Chicken Meatballs

Ingredients

  • 1 1/2 pounds of chicken breasts
  • 2 jalapeños seeds removed
  • 1/3 cup of parsley
  • 1/2 red onion sliced
  • 1 teaspoon of salt
  • Optional: 1/4 teaspoon of black pepper
  • 1/3 cup of shredded Cheddar cheese
  • 1 large egg
  • 2 cloves of garlic

Instructions

  • Preheat your air fryer to 380°F and give the basket a quick spray with oil.
  • Chop the chicken breasts into small pieces and toss them into the food processor.
  • Add jalapeños, parsley, red onion, salt, pepper, Cheddar cheese, egg, and garlic to the processor.
  • Pulse until everything is nicely mixed.
  • Use an ice cream scoop to shape the mixture into balls.
  • Place the meatballs in the air fryer basket with a little space in between. You might need to work in batches.
  • Air fry the meatballs for 12-14 minutes until they’re cooked through and golden brown.
  • Store them in an airtight container in the fridge for up to 4 days.

Notes

To freeze, let the meatballs cool, then arrange them on a baking sheet and freeze for 30 minutes. Transfer them to a freezer-safe container or bag and freeze for up to 3 months. Enjoy these tasty treats anytime!
