Homemade Zeppole (Easy Italian Donuts)

Ingredients
- 2 large eggs
- 1 cup buttermilk pancake mix
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/4 cup granulated sugar
- 1 cup whole-milk ricotta cheese
- 2 teaspoons vanilla extract
- Vegetable oil for frying
- Powdered sugar for sprinkling
- Nutella for dipping
Instructions
- In a bowl, crack the eggs and whisk until you see bubbles forming.
- Add in the pancake mix, baking powder, granulated sugar, salt, and vanilla extract. Mix until it’s crumbly.
- Fold in the Ricotta cheese until the mixture becomes smooth.
- Heat the vegetable oil in a pot or Dutch oven until it reaches 325-375 degrees Fahrenheit.
- Use an ice cream scooper to shape dough balls and carefully drop them into the hot oil. *Remember: drop them close to the oil surface to avoid splashing.
- Cook the Zeppoles for about 3 minutes, turning them regularly until they turn golden brown.
- Take the Zeppoles out of the oil and let them drain on a paper towel.
- Sprinkle powdered sugar on top and serve them warm with Nutella.
Notes
*Note: When dropping the dough balls into the oil, do it close to the surface to prevent splashing. Be cautious to avoid burns during this step!
