Have you ever tried a delightful dessert chimichanga? If not, you’re in for a treat! We took a twist by air frying instead of deep frying, and we even used a bit of butter. Don’t hesitate to opt for lower-carb tortillas if you like!

Strawberry Cheesecake Chimichanga

Ingredients

  • 4 medium-sized tortillas
  • 8 oz cream cheese
  • 1 cup chopped strawberries
  • ¼ cup sugar
  • ¼ cup sour cream
  • 2 tbsp melted butter
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon


Instructions

  1. In a big bowl, mix together cream cheese, sour cream, and sugar until it’s all well combined. Add the chopped berries and gently fold them in.
  2. Lay out a tortilla, spoon the strawberry cream cheese mixture into the center, then fold in the sides and roll it up like a burrito.
  3. Tip: Seal the edge of the tortilla with a bit of the cream cheese and sour cream mixture.
  4. Pop these strawberry cheesecake burritos into the air fryer.
  5. Cook the chimichangas for 10-12 minutes at 350 degrees.
  6. Once they’re out of the air fryer, brush them with melted butter.
  7. Mix the sugar and cinnamon on a plate, and roll the chimichangas in this delightful cinnamon sugar mix.
