Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, mix together old-fashioned oats, oat flour, cinnamon, salt, and baking powder. Set aside.
In another bowl, combine melted coconut oil, granola butter, maple syrup, applesauce, and vanilla extract. Then, add the wet ingredients to the dry mixture and mix until well combined.
Fold in the vegan chocolate chips and hard candies.
Using a double cookie scoop, place dough onto the baking sheet. Lightly flatten each cookie with your palm as they won't spread much during baking.
Bake for 12-15 minutes.
Once baked, let the cookies cool for 5 minutes before transferring them to a cooling rack or plate.
