Preheat oven to 350°F and spray silicon cupcake mold generously with non-stick spray.
Finely chop red bell pepper and spinach.
Blend egg whites, cottage cheese, and mozzarella cheese for 60 seconds.
Place silicon liner on baking sheet, add veggies, fill cavities with egg mixture, sprinkle with salt and pepper.
Fill baking sheet with boiling water halfway up liners, bake for 30-35 minutes until firm.
Cool for 5 minutes before removing from mold and enjoy warm!
