Unroll the thawed puff pastry sheets. Spread a generous layer of chocolate spread on one sheet, then place the second sheet on top.
Use a pizza cutter to slice the pastry into 1-inch-wide strips, leaving the end piece intact for the stars.
Roll each strip accordion-style with at least four layers, creating a tree shape. Insert a skewer into the center of each tree and place them on the baking sheet.
Use a small star cookie cutter to cut stars from the remaining pastry sheet. Place one star on top of each tree.
