Single Serving Pumpkin Spice Cake

Ingredients

  • 1 1/4 cups of pumpkin puree
  • 1 cup of rolled oats
  • 1/4 cup of maple syrup
  • 1 1/2 teaspoons of pumpkin pie spice
  • 1 teaspoon of baking soda
  • 2 eggs
  • 1/2 cup of chocolate chips

Instructions

  • Let's get baking! Preheat your oven to 350°F and grease four ramekins. In a blender, combine all the ingredients except for the chocolate chips. Once blended, divide the mixture evenly among the ramekins. Sprinkle chocolate chips on top of each cake.
  • Bake in the preheated oven for 23-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool before digging in. Enjoy the cozy flavors of fall in every bite!
