Blend the cottage cheese in a blender or food processor until smooth.
Transfer the smooth cottage cheese into a microwave-safe bowl. Add the shredded cheddar cheese and taco seasoning.
Microwave for 1 minute, stir, then microwave in 30-second intervals until smooth and creamy.
Top with pico de gallo and serve with tortilla chips.
Notes
You can use Monterey jack or pepper jack instead of cheddar cheese.
For a single serving, blend the entire container of cottage cheese. Use 1/2 cup of cottage cheese, 1/4 teaspoon taco seasoning, and 1 oz. shredded cheese.
Microwave in shorter intervals to prevent the cheese from becoming too thick, and remember to stir in between.
We even tried microwaving the dip right in the cottage cheese container, and it worked like a charm!
