Spread refried beans on one tortilla, then add taco meat and shredded cheese.
On another tortilla, spread the enchilada sauce, then add shredded cheese and diced tomatoes.
Heat a pan over medium-low heat, spray with oil, and toast both tortillas until crispy.
Stack the tortillas on top of each other (beans and beef on the bottom).
Repeat the process to make 3 to 4 pizzas.
Add sour cream, cilantro, and green onions on top, then cut into four pieces. Enjoy!
