Taco Bell Mexican Pizza

Ingredients
  

**Taco Meat:**

  • 1 pound of ground beef 85/15
  • 1 tablespoon of olive oil
  • 2 teaspoons of minced garlic
  • 2 teaspoons of chili powder
  • 1 teaspoon of coriander
  • 3/4 to 1 teaspoon of salt adjust to taste
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of onion powder
  • 1/4 cup of tomato sauce add more to taste
  • 1 tablespoon of chopped cilantro

**"Pizza" Sauce:**

  • 1/2 cup of enchilada sauce
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of oregano
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of garlic powder
  • 1/2 tablespoon of jalapeño juice

**Other:**

  • Medium tortillas
  • Shredded Mexican cheese
  • Diced tomatoes
  • Chopped cilantro
  • Refried pinto beans
  • Sour cream
  • Diced green onions

Instructions
 

**Taco Meat:**

  • Heat olive oil in a pan over medium heat, then add garlic and cook until golden.
  • Add ground beef to the pan along with all the taco spices. Use a spatula to break up the meat and cook until browned.
  • Once the meat is cooked, add tomato sauce and cilantro. Mix well and set aside to cool slightly.

**"Pizza" Sauce:**

  • Mix enchilada sauce, onion powder, garlic powder, chili powder, oregano, and jalapeño juice in a small bowl. Set aside.

**Assembly and Cooking:**

  • Spread refried beans on one tortilla, then add taco meat and shredded cheese.
  • On another tortilla, spread the enchilada sauce, then add shredded cheese and diced tomatoes.
  • Heat a pan over medium-low heat, spray with oil, and toast both tortillas until crispy.
  • Stack the tortillas on top of each other (beans and beef on the bottom).
  • Repeat the process to make 3 to 4 pizzas.
  • Add sour cream, cilantro, and green onions on top, then cut into four pieces. Enjoy!

Notes

  • For an easier cooking method, toast the tortillas until crispy before adding fillings and toppings. Then, bake in the oven at 350°F for 8 to 10 minutes until the cheese melts.
  • Add a bit of cayenne powder to the taco meat for some extra heat if desired.
