Prepare the tuna filling: In a bowl, mash the tuna well. Add mayo, lemon juice, red onion, black pepper, salt, jalapeƱos, mustard, and cilantro. Mix well.
Make the chipotle sauce: Combine mayo, sour cream, lime juice, honey, black pepper, chili powder, adobo sauce, and chipotle pepper paste in a small bowl. Mix until smooth.
Heat a grill or panini press and spray with oil. Toast two slices of bread per sandwich until crispy and golden brown.
On one slice of bread, spread a layer of pesto, followed by avocado, tomato, and tuna. Spread chipotle mayo on the other slice of bread and close the sandwich.
Cut in half and enjoy with your favorite hot sauce.
