Preheat your oven to 375 degrees. Place two rounds of Boursin cheese and tomatoes into a 9 x 13 baking dish. Drizzle with olive oil, add salt, pepper, garlic, and red pepper flakes.
Bake in the oven for 30-35 minutes.
While baking, boil water in a large pot. Salt the water generously, then cook your favorite pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
Once the tomatoes are roasted, toss them with the cooked pasta and the reserved pasta water. Sprinkle fresh basil, spinach (if using), and parmesan cheese.
