Preheat the oven to 350 degrees Fahrenheit.
In a 12×8 baking dish, combine the uncooked pasta, truffle oil, salt, pepper, garlic, and broth. Gently toss to combine, being careful not to break the pasta.
Cover with aluminum foil and bake for 45-50 minutes or until the noodles are tender.
Remove the foil, add the heavy cream, smoked gouda, and sharp white cheddar. Stir to melt the cheese and combine the ingredients.
Garnish with Italian flat-leaf parsley and serve immediately.
