Preheat your oven to 350°F and line two large baking sheets with parchment paper.
In a big bowl, mix together the brown sugar, pumpkin puree, melted butter, and vanilla. Sprinkle the pumpkin pie spice, baking soda, and salt evenly over the mixture, then stir to combine.
Add the flour and stir until well combined. Fold in the chocolate chips.
Use a 2-tablespoon cookie scoop to drop the dough onto the prepared baking sheets.
Bake for 10 to 12 minutes or until the cookies have a golden brown edge. Take them out of the oven and let them cool completely on the baking sheets.
