Sheet Pan Protein Banana Bread

Ingredients
- 4 ripe bananas mashed
- 3/4 cup coconut sugar
- 1/4 cup melted coconut oil
- 2 eggs or flax eggs or 1/3 cup applesauce
- 1 cup gluten-free flour
- 3/4 cup Kodiak Cakes protein oats
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tsp cinnamon
- 3/4 cup chocolate chips
Instructions
- Start by preheating your oven to 350°F and spraying an 11×7 sheet pan (or 1/4 sheet pan) with oil spray.
- In a large bowl, mash the bananas until smooth. Add in the coconut sugar, melted coconut oil, eggs or substitutes, and mix until well combined.
- Next, add the flour, oats, baking soda, salt, and cinnamon to the bowl. Mix everything together, then gently fold in the chocolate chips.
- Transfer the batter to the prepared baking pan and use a spatula to spread it out evenly.
- Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown.
- Once done, remove from the oven and allow to cool completely before slicing into 12 squares.
