Our One-Pot Boursin Pasta is a breeze! Let your noodles simmer in 4 cups of water, toss in some frozen peas, and add Boursin cheese. That’s all there is to it!

This dish might just be the champion of easy and tasty dinners on Fit Foodie Finds. In our one-pot series, we’re all about keeping things simple, and this pasta, the second installment after our adult spaghettios, is ridiculously easy to put together.

We tinkered with this recipe until we got the pasta-to-water ratio just right. No need for a strainer here—we wanted it to be truly one-pot. And guess what? We nailed it! Mixing the residual pasta water with Boursin created the creamiest, dreamiest sauce.

Ingredients
  

  • 1 lb. rigatoni pasta
  • 10 oz. frozen peas
  • 5.2 oz. garlic and chive Boursin Cheese puck
  • ½ teaspoon freshly ground black pepper

Optional Toppings:

  • 1 tablespoon minced fresh chives
  • Zest from 1/2 lemon

Instructions
 

  • Bring 4 cups of salted water to a boil and add the pasta. Cook until just al dente. You might notice less water than usual, and that’s perfectly fine!
  • About 2 minutes before the pasta is done, toss in the peas. Let them cook together for the remaining time.
  • Add the Boursin cheese to the hot pasta and stir until it melts into creamy goodness.
  • Season with salt, pepper, lemon zest, and fresh chives. Dinner is served!

Notes

  • The amount of water left after cooking can vary, depending on factors like elevation and pasta type.
  • Be cautious not to add too much water, or the cheese sauce might turn runny.
  • Feel free to swap rigatoni for any similar pasta shape.
  • Experiment with different flavors of Boursin cheese, or try goat cheese if Boursin isn’t available. Enjoy your meal!
