Golden Syrup Sponge Pudding Cake

Ingredients

Cake Ingredients:

  • 1 cup dairy-free milk room temp (I used soy)
  • 1 tsp vinegar apple cider or white
  • 1/2 cup golden syrup
  • 1/3 cup vegetable oil or other mild oil
  • 2 3/4 cups self-raising flour
  • 1/2 cup dairy-free yogurt I used soy
  • 1/2 cup light brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda

Glaze Ingredients:

  • 2 tbsp boiling water
  • 1/4 cup golden syrup

Instructions

  • Preheat the oven to 340°F (170°C) with a fan.
  • Line and lightly grease a square baking dish (about 8 inches, but fill until 3/4 full to allow for rising).
  • Mix together the milk and vinegar, then set aside for 10 minutes to thicken.
  • Once thickened, pour into a large mixing bowl and add the remaining wet ingredients.
  • Sift in the dry ingredients.
  • Gently mix until just combined.
  • Pour the batter into the prepared baking dish.
  • Bake for 35-40 minutes, or until the center of the cake is set.
  • When the cake has only a few minutes left to bake, prepare the glaze by mixing the ingredients together.
  • When the cake is done, leave it to cool for 10 minutes, then poke holes in the top.
  • Pour the glaze over the cake, spreading it to cover completely.
  • Let the glaze set for about 20 minutes before serving.
