Deconstructed Healthy Apple Pie

Ingredients
- 4 large apples peeled and sliced
- 1 cup gluten-free baking flour or regular all-purpose flour
- 3/4 cup plus 1 tablespoon coconut sugar
- 5 tablespoons vegan butter or regular butter melted
- 1 egg
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped pecans
Instructions
- Preheat your oven to 350°F.
- Grease a 9-inch pie dish or baking dish thoroughly and set it aside.
- Peel the apples and slice them into pieces about 1/2 inch thick – no need to be too precise!
- Place the sliced apples into the prepared dish.
- Sprinkle 1 tablespoon of coconut sugar and 1 teaspoon of cinnamon over the apples.
- In a medium bowl, combine the flour, remaining coconut sugar, melted butter, vanilla extract, sea salt, and chopped pecans. Mix well.
- Add the egg to the mixture and stir until everything is well combined.
- Spoon the batter evenly over the apples, using your hands to spread it out if needed.
- Bake for 45-50 minutes, or until the crust is golden brown.
