Deconstructed Healthy Apple Pie

Ingredients

  • 4 large apples (peeled and sliced)
  • 1 cup gluten-free baking flour or regular all-purpose flour
  • 3/4 cup plus 1 tablespoon coconut sugar
  • 5 tablespoons vegan butter or regular butter (melted)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans


Instructions

  1. Preheat your oven to 350°F.
  2. Grease a 9-inch pie dish or baking dish thoroughly and set it aside.
  3. Peel the apples and slice them into pieces about 1/2 inch thick – no need to be too precise!
  4. Place the sliced apples into the prepared dish.
  5. Sprinkle 1 tablespoon of coconut sugar and 1 teaspoon of cinnamon over the apples.
  6. In a medium bowl, combine the flour, remaining coconut sugar, melted butter, vanilla extract, sea salt, and chopped pecans. Mix well.
  7. Add the egg to the mixture and stir until everything is well combined.
  8. Spoon the batter evenly over the apples, using your hands to spread it out if needed.
  9. Bake for 45-50 minutes, or until the crust is golden brown.
  10. Let it cool slightly, then dig in and enjoy your easy and delicious apple pie!
