Deconstructed Healthy Apple Pie

Ingredients

  • 4 large apples peeled and sliced
  • 1 cup gluten-free baking flour or regular all-purpose flour
  • 3/4 cup plus 1 tablespoon coconut sugar
  • 5 tablespoons vegan butter or regular butter melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans

Instructions

  • Preheat your oven to 350°F.
  • Grease a 9-inch pie dish or baking dish thoroughly and set it aside.
  • Peel the apples and slice them into pieces about 1/2 inch thick – no need to be too precise!
  • Place the sliced apples into the prepared dish.
  • Sprinkle 1 tablespoon of coconut sugar and 1 teaspoon of cinnamon over the apples.
  • In a medium bowl, combine the flour, remaining coconut sugar, melted butter, vanilla extract, sea salt, and chopped pecans. Mix well.
  • Add the egg to the mixture and stir until everything is well combined.
  • Spoon the batter evenly over the apples, using your hands to spread it out if needed.
  • Bake for 45-50 minutes, or until the crust is golden brown.
  • Let it cool slightly, then dig in and enjoy your easy and delicious apple pie!
