Get ready to meet the upgraded version of your beloved childhood treat – Cosmic Brownie Cookies! These decadent chocolate cookies come with a glossy chocolate ganache frosting and are adorned with the classic cosmic brownie chips. It’s a chocolate lover’s dream come true!

Cosmic Brownie Cookies

**For the cookies:**

  • 1 cup melted salted butter
  • 1 ¼ cups granulated sugar
  • ¾ cup light brown sugar
  • 2 tsp vanilla extract
  • 2 eggs at room temperature
  • 1 ⅔ cups all-purpose flour
  • 2 tsp corn starch
  • 1 cup cocoa powder dark chocolate cocoa powder is my preference, but use your favorite!
  • 1 tsp baking soda
  • ½ tsp kosher salt

**For the ganache frosting:**

  • 8 oz semi-sweet chocolate baking chocolate bars or chocolate chips
  • ¾ cup heavy cream
  • ½ tsp vanilla extract
  • 1 cup cosmic brownie sprinkles


**For the cookies:**

  • In a stand mixer, blend melted butter, granulated sugar, light brown sugar, and vanilla extract for 1 minute on medium speed.
  • Add eggs and mix on low until combined.
  • Incorporate flour, corn starch, cocoa powder, baking soda, and salt, mixing on low until everything comes together.
  • Using a medium-sized cookie dough scoop (about 2-2.5 tablespoons), form 20 even cookie balls on a parchment-lined baking sheet.
  • Refrigerate for 30 minutes to enhance flavor and prevent spreading. Preheat the oven to 350°F.
  • Space chilled cookie dough 2 inches apart on a parchment-lined sheet and bake for 9-10 minutes until edges are set.
  • Cool on the baking sheet for 3 minutes, then transfer to a rack to cool completely.

**For the ganache:**

  • While cookies cool, break chocolate into pieces and place in a heatproof bowl.
  • Heat cream in a pot on the stove until simmering, then pour over the chocolate.
  • Let it sit for 5 minutes, then add vanilla extract and whisk until smooth.
  • Cool for 15-30 minutes until spreadable.


  • Once cookies are completely cooled, spread 2-3 tablespoons of ganache on top, leaving a ¼-inch border.
  • Sprinkle cosmic brownie sprinkles on top.
  • Serve or refrigerate to set the ganache completely.
