Ingredients
  

  • 1 1/4 cups of almond flour or oat flour if you prefer
  • 1/3 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking soda
  • 1/2 cup of creamy cashew butter
  • 1 egg or use a flax egg for a vegan option
  • 1/2 teaspoon of kosher salt
  • Zest of 1 orange
  • 1/2 cup of white chocolate chips
  • 2/3 cup of dried unsweetened cranberries divided

For the cream cheese frosting, you’ll need:

  • 1 8- ounce container of cream cheese
  • 3/4 cup of powdered sugar

And for the melted white chocolate drizzle, you’ll need some extra white chocolate.

    Instructions
     

    • Let’s get baking! Preheat your oven to 325 degrees F. In a large bowl, mix together the almond flour, maple syrup, vanilla extract, baking soda, cashew butter, and orange zest. The batter will be thick, but that’s perfectly okay! Next, add in the white chocolate chips and 1/2 cup of the dried cranberries. Mix everything together until well combined.
    • Transfer the batter into a parchment-lined 8×8 baking dish. Press the dough down gently and evenly. Pop it into the oven and bake for about 20 minutes until it’s golden brown. Once baked, let it cool completely.
    • While the bars are cooling, prepare the cream cheese frosting by beating together the cream cheese and powdered sugar until smooth. Spread this delicious frosting over the cooled bars, then sprinkle the remaining dried cranberries on top. For an extra touch of sweetness, drizzle some melted white chocolate over the bars.
    • Now, all that’s left to do is slice, serve, and enjoy these delightful treats! You can store any leftovers in a covered container for up to a week, or freeze them for up to 3 months.
